- Salt and pepper
As for the directions to prepare the soup, the doctor laid them out as follows:
- Roast the pumpkin and butternut squash with olive oil, salt, and pepper at 400 degrees for 10 to 15 minutes.
- In a large, heavy stock pot or a Dutch oven, sauté shallot, red curry paste, and turmeric in olive oil for 8 to 10 minutes. The shallots should be soft and translucent.
- Add vegetable broth, roasted pumpkin, and squash.
- Simmer for at least 20 minutes.
- Taste and adjust with salt, pepper, and/or red curry paste.
- Add coconut milk and simmer, stirring occasionally.
