Broccoli extract contains a high amount of sulfurophane, which is a protective compound found in plants that contains sulfur groups. Sulfurophane is produced from the compound glucoraphanin once the plant has been damaged (i.e., chewing). Young broccoli sprouts are very rich in glucoraphanin. They have up to 10-100 times more glucoraphanin than broccoli. Of all of the cruciferous vegetables, broccoli has the highest amount of these plant protective compounds. Cooking broccoli destroys sulfurophane. This is why broccoli seed extract is the way to go. Sulfurophane can activate proteins that increase the activity of antioxidants. Antioxidants protect against inflammation and oxidative stress that cause disease. It can also increase the activity of glutathione-s-transferase to produce glutathione, which is created to detoxify highly cancerous compounds. Glutathione is the body's master protective antioxidant. Broccoli seed extract has potent anti-cancer properties. The National Cancer Institute even states that broccoli seed extract has the potential to "accelerate the elimination of carcinogens, protect against cellular damage and prevent cancer formation". ‚ÄčThere are a lot of pharmaceutical drugs that are now being created that work in this same mechanism to prevent diseases like cancer.
